Turkish chicken wraps (doner)

For the bread (Lavaş Ekmeği):
(makes 8 servings, each with a diameter of about 20 cm)
1 ½ cup all-purpose flour (1 cup = 250 ml)
3 tablespoons yogurt
1 teaspoon salt
100 ml water

You can also buy ready-made bread and use it instead of making your own.

For the fillings:
600 g chicken breast
100 ml milk
50 ml olive oil
black pepper
½ teaspoon ground cumin
½ teaspoon paprika
sunflower oil and butter for frying

5 red peppers
2 tablespoons tomato puree
1 teaspoon chili paste

500 g potatoes
2-3 red onions
2-3 tomatoes
iceberg lettuce

For the sauce:
2 tablespoons sunflower oil
2 tablespoons butter
4 tablespoons mayonnaise

Mix half of the flour together with the water, yogurt and salt in a bowl. Combine them well and start adding more flour. Knead until the dough is not sticky but is still soft. Divide it into small balls and set them aside to rest for ½ hour covered with plastic wrap.
Roll each ball out into a circle that is about 2 mm thick.

Bake them from both sides in a dry pan over low heat (in my case 6 out of 9 possible levels of heat).

Bake until brown spots start forming and then turn them.

Cut the chicken into thin Julienne strips. Sprinkle with black pepper, paprika, cumin and salt. Pour milk and olive oil onto it and leave it to marinade like this for 1 night in the fridge in a closed container.
Heat a little sunflower oil in a deep wok pan as well as the same amount of butter. Put the chicken strips in it and fry until they are done.

Cut the onion in small crescent-shaped pieces and boil it in cooking oil and water.

Clean the peppers and cut them into Julienne strips, each about 5 cm long. Fry them in heated cooking oil until they soften. Then add the tomato puree and the chili paste. Fry for one more minute and remove from the heat.

Cut the potatoes into strips and fry them in a fryer. I recommend using an Airfryer but a regular one can be used as well.

Cut the iceberg lettuce and the tomatoes into Julienne strips.

Heat the oil, butter and chili so that the butter melts. Add the mayonnaise and blend them well.
