French dish with potatoes, reblochon cheese, lardons and onions

INGREDIENTS:
For a 21×21 cm baking tray
1 kg potatoes
3 onions (~500 g)
300 g reblochon cheese
150 g bacon
150 ml white wine
50 ml liquid cream
2-3 tablespoons olive oil
30 g butter
fresh thyme
black pepper
salt

PREPARATION:
Peel the potatoes and boil them in salted water. Peel the onion and cut it into 4 pieces, then into thin slices while the potatoes are being boiled. Put the onion into a deep pan together with the olive oil and butter and fry over medium heat until the onion begins to change its color. Add the thyme and pieces of bacon and cook until it browns. Deglaze with the white wine and continue cooking until the wine evaporates.
Cut the potatoes into slices that are about half a centimeter thick.
Grease the baking tray where you will bake the dish with butter. Put a layer of potato slices and season with salt and black pepper. Follow up with half of the mixture of onion and bacon. Put ¼ of the reblochon cheese, cut into small pieces.

Cover with another layer of potatoes. Season again with salt and black pepper, follow up with the remaining onion and bacon and another ¼ of the cheese. Finish with a potato layer. Again season with salt and black pepper and place the remaining cheese. Pour the liquid cream onto it and bake in a pre-heated oven at 200°C for 20-30 minutes.
