Tartelettes with chocolate mousse

INGREDIENTS:
For the sponge:
150 g all-purpose flour
50 g starch
100 g sugar
100 g soft butter
100 ml milk
2 eggs
1 teaspoon baking powder
vanilla

butter for spreading
flour for sprinkling

For the chocolate mousse:
200 g milk or dark chocolate (I used milk chocolate)
200 ml liquid cream
40 g butter
3 yolks
60 g sugar
40 ml water
a pinch of salt

PREPARATION:
Sponge
Whisk the eggs with the sugar. Add the softened butter and whisk again. Add the milk and vanilla and sift the flour, starch and baking powder onto it. Beat with a hand mixer until they combine. Get small tartlet molds like the ones shown below and grease them with butter.

Flour them and fill them with the mixture until it covers the raised bottom with about half a centimeter.
Bake them at 180°C for 20-25 minutes or until they brown. Leave them to chill and then remove them from the molds. Turn them around onto a plate.

Chocolate mousse
Melt the chocolate in bain-marie together with the butter and a pinch of salt. Remove from the heat and add the cream. Stir to combine them. You can also only add half of the cream, whip the other half and add it after that if you want to achieve a thicker and bulkier consistency.
Beat the yolks. Boil a syrup made of the water and the sugar. Boil until it reaches 117°C (this is the moment right before the syrup starts to caramelize and darken). If you don’t have a cooking thermometer you can get a drop of the syrup, pour it into a glass of cold water and if the drop dissolves into the water it means the temperature hasn’t been reached. Pour the hot syrup slowly onto the yolks while beating at a high speed with a hand mixer. Continue beating until the mixture chills. This way of beating the yolks is a French technique called pâte à bombe. Mix the yolks with the melted chocolate and fill up the tartlets with it.

Leave them in the fridge for a few hours so that the mousse can harden.
