Sichuan beef with noodles

INGREDIENTS:
300 g beef meat
2 tablespoons olive oil
black pepper
salt

For the marinade:
3 tablespoons soy sauce
1 tablespoon sesame oil
2 tablespoons rice wine
3 tablespoons starch
1 teaspoon brown sugar

For the noodles:
200 g shiitake mushrooms
300 g noodles
1 onion
2 garlic cloves
2 cm fresh ginger
1 chili pepper
1 red pepper
1 green pepper
1 tablespoon rice wine
1 tablespoon sesame oil
2 tablespoons light soy sauce
1 tablespoon brown sugar

For sprinkling:
green onion or chives
sesame

PREPARATION:
Beef meat
Rinse and dry the meat. Cut it into julienne strips. Season with salt and black pepper. Add the remaining ingredients for the marinade. Stir well and leave it to marinate in a closed box for a few hours.

Noodles
Boil the noodles as stated on the instructions on their box.
Fry the beef meat together with the marinade in a Wok-type of pan with 2 tablespoons of olive oil and 1 tablespoon of sesame oil for a few minutes. When the meat browns move it to a plate.
Cut the onion, garlic, chili pepper and ginger and put them in the same pan with several tablespoons of olive oil. Add the peppers that you’ve cut into julienne strips beforehand. When they get soft add the mushrooms, again cut into thin pieces before that. Cook until the mushrooms become slightly red in color and return the meat to the pan and the drained noodles. Season with the light soy sauce and the brown sugar. Cook for another minute and serve the dish sprinkled with green onion or chives and sesame.
