Buns stuffed with apricots

INGREDIENTS:
For the dough (makes about 16 buns):
~420 g all-purpose flour
150 ml milk
50 g butter
14 g active yeast
100 g sugar
1 egg

For the filling:
250 g dry apricots
4-5 tablespoons apricot jam
2-3 tablespoons sugar

PREPARATION:
Dough
Dissolve the yeast in heated milk. Add 1 tablespoon of sugar, stir and set it aside for 5-10 minutes to rise. Beat the egg with the sugar. Put ¾ of the flour in a bowl and make an indentation in the it. Pour the egg mixture into it followed by the milk and yeast. Start combining them with a fork at first, adding flour as needed and then continue kneading with your hands. The dough should be soft but not sticky. Gradually add soft butter to the dough. Leave it to rest for at least an hour. It won’t rise much due to its heaviness that comes from the high amount of sugar and butter but this shouldn’t worry you. Meanwhile prepare the filling.

Filling
Cut the dry apricots into small pieces. Put them in a saucepan and add water so that it covers them. Add sugar as well and boil for about 5 minutes until the water evaporates completely. Mix the apricots with the apricot jam.

Roll the dough out into a filo that is about 5-7 mm thick and cut out circles from it. In my case their diameter was 7 cm. Make two cuts into each circle as shown below:

Put some of the filling between the cuts. Notice that I put too much of it on the photo below. This makes it harder to shape up the buns.

Pull the edges of the dough where you have made the cuts and then make them cross each other onto the filling.

Put them onto a sheet of baking paper in a baking tray and leave them to rest for at least ½ hour. Beat the yolk with a tablespoon of melted butter and spread it onto the buns. Bake in a pre-heated oven at 180°C for about 20 minutes. When serving you can also sprinkle with sugar.
