Chickpeas with caramelized onions

Pois chiches aux oignons caramélisés

INGREDIENTS:
250 g raw chickpeas
3-4 tablespoons olive oil
4 red onions
½ teaspoon turmeric
½ teaspoon ground ginger
2 teaspoons brown sugar
a pinch of cinnamon
a handful of raisins

PREPARATION:
Soak the chickpeas in cold water for a whole night. Boil it until it gets soft for at least an hour or under pressure for about 40 minutes. Drain it from the water.
Cut 2 of the red onions into small cubes and the other 2 into crescent-like shapes. Put it into a deep pan with the olive oil and cook for about 5-6 minutes until the onion gets soft and starts to caramelize. Add the ginger, turmeric, cinnamon, sugar and raisins. Cook for another few minutes and add the boiled chickpeas. Stir and cook a little more and serve.
