White wine garlic scallops

INGREDIENTS:
12 Saint-Jacques scallops
2 garlic cloves
40 g butter
1 tablespoon olive oil
50 ml white wine
fresh parsley
black pepper
salt

PREPARATION:
Peel the garlic and cut it into small pieces. Rinse the scallops and dry them using kitchen paper. Season with salt and black pepper. Heat the olive oil and butter in a pan and add the scallops. Cook them for about 30 seconds-1 minute from each side. When you turn them around add the garlic. Once the garlic begins to change its color deglaze with the white wine. Leave the wine to evaporate and serve the scallops sprinkled with finely cut fresh parsley.
