Neapolitan tomato sauce
INGREDIENTS:
2 kg blended tomatoes
3-4 tablespoons olive oil
1 onion
1-2 garlic cloves
500 g pork ribs
500 g beef meat
200 g raw sausage
200 ml wine
2 tablespoons tomato puree
1 teaspoon sugar
a handful of fresh basil
salt
black pepper
PREPARATION:
Cut the onion and garlic into small pieces and fry them with the olive oil. Add the beef meat, ribs and sausage and cook until they brown from all sides. Season with salt and black pepper. Deglaze with the wine and cook until it evaporates. Add the blended tomatoes and tomato puree, sugar and basil. When it starts boiling lower the heat and cook under a lid for 3-3 ½ hours while stirring occasionally.
Remove the meat and use the sauce for the Neapolitan lasagna (shown on the photo below). Click HERE for its recipe. You will get more sauce than you need for this dish but you can keep it in the freezer or use the meat for another dish with appropriate garnish.
