Potato croquettes

INGREDIENTS:

500 g boiled potatoes
100 g bacon
1 onion
3 tablespoons olive oil
2-3 tablespoons chives chopped into small pieces
2-3 tablespoons parmesan cheese (optional)
salt
black pepper

For the fry batter:
100 g all-purpose flour
100 g Panko or breadcrumbs
2 eggs

PREPARATION:
Boil the potatoes and mash them using a fork. Peel the onion and cut it into small pieces. Sauté it in the olive oil until it becomes soft. Then add the chopped bacon. Fry until it turns red in color and add it to the potatoes. Add the parmesan and the chives. Season with salt and black pepper. From the mixture make small balls that are slightly bigger than a walnut. Dredge each one in flour and then in beaten eggs and finally in Panko. Fry them in heated sunflower oil and serve them warm.
