Makes 18 madeleines:
120 g all-purpose flour
100 g butter
100 g sugar
2 eggs + 1 yolk
½ teaspoon baking powder
powdered sugar for sprinkling (optional)
butter for spreading
flour for sprinkling
Whisk the eggs and the yolk together with the sugar. Add the lemon zest and the melted butter and again whisk with a mixer. Sift the flour and baking powder onto it and stir with a spatula.
The madeleines should be baked in special silicone or metal molds like these:
Using a pastry brush spread butter onto each mold and sprinkle with flour. Remove the excess flour and put about a tablespoon of the dough into each mold. Bake in a pre-heated oven at 190°C for about 13-14 minutes or until they brown slightly.
Optionally you can sprinkle powdered sugar onto them when serving.
