Turkish stuffed flatbread

INGREDIENTS:
For the dough:
~520 g all-purpose flour
250 ml warm water
1 teaspoon dry yeast
1 teaspoon sugar
1 teaspoon salt
3 tablespoons sunflower oil

For the filling:
The filling can vary. Here are a few options:

With cheese:
350-400 g white cheese
a handful of fresh parsley

With spinach and cheese:
400 g fresh spinach
1 onion
1 egg
300 g white cheese
2-3 tablespoons sunflower oil

With potatoes:
5-6 boiled potatoes
1 onion
2-3 tablespoons sunflower oil
1 tablespoon tomato puree
1 teaspoon paprika
½ teaspoon black pepper
½ teaspoon hot paprika
salt

With meat:
300 g minced meat
1 onion
2-3 tablespoons sunflower oil
1 boiled potato
fresh thyme
black pepper
salt
100 g grated yellow cheese

60 g melted butter for spreading

PREPARATION:
Dough
Dissolve the yeast and sugar in the warm water. Stir and leave the mixture to rest for 5-10 minutes. Get half of the flour into a bowl and mix it with the salt. Make an indentation in the middle and pour the mixture of yeast and water inside it, as well as the sunflower oil. Start adding more of the flour gradually while stirring first with a fork and then with your hands. Add flour until you get a soft dough that is not sticky. Divide it into 10 equal parts and leave them to rest in a floured baking tray, covered with plastic wrap for about an hour.

Filling
Cheese filling
Mash the cheese and mix it with some finely cut parsley.

Cheese and spinach feeling
Cut the onion into small pieces and fry it with the sunflower oil. Add the rinsed spinach and cook for another several minutes. Remove from the heat and add the mashed cheese. Once it has chilled add the egg as well.

Potato filling
Boil the potatoes in salted water and mash them using a fork.
Chop the onion into small pieces and fry it with the sunflower oil until it softens. Add the mashed potatoes, tomato puree, paprika, hot paprika and black pepper. Cook for 1-2 minutes, season with salt and leave it to chill.

Meat filling
Boil the potato and mash it. Cut the onion into small pieces and fry it with the sunflower oil until it softens. Add the minced meat, thyme, black pepper and salt. Cook until the meat browns. Then add the boiled potato. Stir and leave it to chill.
Once it has chilled add the grated yellow cheese.

Roll each piece of the dough out into a circle that is about 2 mm thick and put some of the chosen filling onto one half of it.

Put some water onto the edges around the filling and fold the circle. Press onto the edges with your fingers to ensure that they stick together.

Bake in a dry pan over medium heat (in my case 5 or 6 out of 9 possible heat levels).

Bake for 2-3 minutes on each side.

Turn them around and using pastry brush spread some melted butter onto them. Once they are ready cut them in half and serve.
