INGREDIENTS:
Makes 28-30 truffles
For the dough:
240 g all-purpose flour
120 g butter
3 tablespoons powdered sugar
1 tablespoon water
vanilla
For the filling:
100 g ground almonds
100 g dark chocolate
3-4 tablespoons powdered sugar
1 egg white
cocoa for sprinkling
PREPARATION:
Dough
Knead a dough from the flour, powdered sugar, vanilla and the soft butter. If needed add 1 tablespoon of water. Cover it with plastic wrap and leave it in the fridge for at least an hour.
Filling
Melt the chocolate in bain-marie and mix it with the ground almonds, powdered sugar and beaten egg white.
Divide the dough into small balls. Press onto them so that they become smooth, put some of the filling onto them and enclose it carefully. Put them into a baking tray covered with baking paper. Bake the truffles in a pre-heated oven at 200°C for about 20-25 minutes. Sprinkle with cocoa and serve.
