INGREDIENTS:
For the base:
11 eggs
250 g all-purpose flour
80 g cocoa
340 g sugar
100 g butter
a pinch of salt

For the cream:
400 ml liquid cream
400 g sour cream
300 g mascarpone
220 g powdered sugar
edible green confectionery paint

For the cream that covers the cake:
400 g liquid cream
300 g mascarpone
150 g powdered sugar
edible green confectionery paint

For the syrup:
100 g sugar
200 ml water

For decoration:
sugar and chocolate balls (different colors)
chocolate for molding
gold spray (edible)

PREPARATION:
The base
Whisk the eggs, separated into yolks and egg whites. Beat the egg whites with a pinch of salt into snow. In a different bowl beat the yolks with the sugar until they rise in volume. Add the melted butter and beat again. Sift the flour and the cocoa onto them. Stir carefully with a spatula and slowly add the whisked egg whites. Finish by adding the whole quantity of the egg whites and stir until they combine. Pour the mixture into two large baking trays, each covered with a sheet of baking paper.

Bake in a pre-heated oven at 180°C for about 10-15 minutes. Check whether it is ready using a wooden skewer. Leave it to cool and cut it into 12 squares with the following dimensions:

– 13 х 13 cm
– 11 х 11 cm
– 9 х 9 cm
– 8 х 8 cm
– 7 х 7 cm
– 6 х 6 cm
– 4.5 х 4.5 cm
– 3.5 х 3.5 cm
– 2 х 2 cm

The cream for the cake
Whip the liquid cream with the powdered sugar into foam. Add the mascarpone and sour cream and beat until you get a thick cream.

Syrup
Heat the water with the sugar until it melts. Leave the syrup aside to cool.

ASSEMBLING THE CAKE
Put the biggest square of the base onto a cake plate and syrup it a little. Spread cream on it and place the second biggest square so that its edges don’t align with the first square’s. Syrup and spread some cream. Follow up with the next square, again making sure that the edges don’t align.

Keep doing this until you have placed all the squares, finish with the smallest one.

Add some edible green confectionery paint to the remaining cream and stir to combine. Spread this cream along the sides of the cake.

The cream to cover the cake
Whip the liquid cream with the sugar. Add the mascarpone and green confectionery paint and beat again until they combine.
Put the cream into a piping bag with a thin star-shaped tip and cover the whole cake with the green cake.

Decorate the cake with chocolate and sugar balls of different colors. The star at the top is made of chocolate for molding and is sprayed with edible gold spray.
