Namibian curry with chicken

INGREDIENTS:
500 g chicken meat
1 onion
2 garlic cloves
1-2 cm ginger
2 bay leaves
1 teaspoon curry
½ teaspoon turmeric
½ teaspoon ground cloves
½ teaspoon coriander
½ teaspoon dry thyme
2-3 carrots
1 sweet potato
3-4 potatoes
200 g mushrooms
½ cup white wine
2 tablespoons sweet chutney
5-6 dried apricots
1 chicken bouillon cube
½ cup milk
salt
black pepper

Fresh coriander for sprinkling

PREPARATION:
Chop the meat and season it with salt and black pepper. Cut the onion, garlic and ginger into small cubes and fry them in a little sunflower oil. When the onion becomes soft add the meat, curry, turmeric, cloves, coriander and thyme. Cook until the meat gets browned and deglaze with the wine. When it evaporates add the mushrooms followed by the bouillon cube, chutney, dried apricots, sweet potato, potatoes and carrots several minutes later. Add water so that it covers the meat and the vegetables.
Cover with a lid and leave it to cook over low heat for at least ½ hour. Season with salt if needed and add the milk.
Serve sprinkled with fresh coriander.
