For the chicken meat base:
600 g minced chicken meat
100 g grated mozzarella
50 g grated parmesan
fresh or dried thyme
sour cream or crème fraîche
blue cheese (roquefort)
yellow cheese, edam, gouda or other cheese
fresh basil for sprinkling
Mince the chicken meat and add the grated parmesan and mozzarella, egg, thyme, salt and black pepper. Mix well and put the mixture into a wide baking tray covered with baking paper. Make the meat into a circle that is 7-8 mm thick, like a pizza.
Bake in a pre-heated oven at 200°C. Remove from the oven and spread sour cream onto it, followed by small pieces of the cheese and cherry tomatoes sliced in half. Add the bacon, chopped into cubes and pre-cooked in a pan. Sprinkle with dry oregano and basil.
Continue baking at 200°C for about 10-15 minutes until the cheese melts. Serve sprinkled with fresh basil.
