Cauliflower pizza crust

INGREDIENTS:
For the cauliflower crust (makes 2 pizzas):
1 big cauliflower head (1.2 – 1.3 kg)
100 g grated mozzarella
5-6 tablespoons grated parmesan
3 eggs
1 teaspoon garlic powder
1 teaspoon dry basil
1 teaspoon dry oregano
1 teaspoon black pepper
1 teaspoon salt

For the topping:
tomato sauce
mozzarella
blue cheese
prosciutto crudo
bacon (salami, ham)
cherry tomatoes
basil
olive oil

PREPARATION:
Cauliflower crust
Tear the florets of the cauliflower and blend them until you get very tiny pieces. You can also grate them instead. Add the salt, stir and microwave at the maximum possible level for 5 minutes. Leave it to cool and add the grated mozzarella, parmesan, dry basil and oregano, garlic powder, black pepper and slightly whisked eggs. Stir, divide the mixture into two and shape it into 2 pizzas. Put them into baking trays that are covered with sheets of baking paper.

Bake in a pre-heated oven at 200°С for about 20-25 minutes or until it browns.

Spread the tomato sauce and any topping of your choice onto the crust. Drizzle olive oil over the pizza and bake for another 6-7 minutes until the cheese melts. You can also find a recipe for a tomato sauce HERE.
Place cherry tomatoes (cut into halves) and fresh basil leaves onto the pizzas. On the photos below one of the pizzas has a topping of tomato sauce, mozzarella, blue cheese, olive oil, cherry tomatoes and fresh basil.
