Breaded veal brains

INGREDIENTS:
250-300 g veal brain

For the breading:
2-3 eggs
corn flakes without added flavors (or breadcrumbs or Panko)
salt
black pepper

PREPARATION:
Remove the thin skin and blood-vessels that are all around the brain and put it into salted boiling water. Boil for 2 – 2 ½ minutes. Remove it from the water and leave it to chill. Cut it into smaller pieces. Dredge them in beaten eggs and then in crushed corn flakes/bread crumbs. Fry in heated cooking oil until it starts browning. Remove from the oil and place onto kitchen paper so that the excess oil can be drained.
