Brownie with white chocolate

White chocolate brownie

INGREDIENTS:
For a square shape with a size of 21 x 21 cm (makes 9 pieces):
250 g white chocolate
100 g butter
100 g ground almonds
160 g sugar
80 g all-purpose flour
4 eggs
a pinch of salt
vanilla

powdered sugar for sprinkling

PREPARATION:
Melt the white chocolate and butter in bain-marie. Stir until they become homogeneous. Whisk the egg whites together with a pinch of salt. When you are almost done add half of the sugar and beat until the egg whites absorb the sugar. Beat the yolks with the remaining sugar and vanilla in another bowl. Add the ground almonds and the flour and stir with a spatula. Finish by adding the egg whites while carefully stirring. Transfer the mixture into a square-shaped baking tray with a sheet of baking paper on its bottom.
Bake in a pre-heated oven at 180°C for about 30-35 minutes. Check whether it is ready by using a wooden skewer. Leave the blondie to chill and cut it into square-shaped pieces. Sprinkle with powdered sugar.
