Korean rice mixed with vegetables and meat

INGREDIENTS:
Makes 3 servings
250-300 g veal meat
4-5 shiitake mushrooms
200-250 g bean sprouts
250-300 g spinach
2 carrots
2-3 green onion sprigs
2-3 red peppers
1 cucumber
1 zucchini
3-4 garlic cloves
1 tablespoon soy sauce
1 tablespoon liquid honey
4 ½ tablespoons sesame oil
1 teaspoon sugar
sunflower oil
salt

an egg per each serving
sesame for sprinkling

For the spicy sauce:
2 heaped tablespoons gochujang (Korean hot pepper puree)
1 tablespoon soy sauce
1 tablespoon sesame oil
1 teaspoon mashed garlic
1 teaspoon rice vinegar
1 teaspoon sugar
1 teaspoon sesame

For the rice:
1 ½ cup short grain rice
2 ½ cups water
1 tablespoon light soy sauce
1 tablespoon sesame oil
salt

1 cup = 250 ml

PREPARATION:
If the shiitake mushrooms are dry put them in warm water for about an hour. If they are fresh skip this step. Cut them into thin julienne strips.

Cut the veal meat into thin juliennes. Add a teaspoon of mashed garlic, a tablespoon of soy sauce, a tablespoon of liquid honey, a tablespoon of sesame oil and a teaspoon of sesame. Stir and leave the meat to marinate in a closed box for about an hour.

Rinse the rice under running water and put it into a saucepan with the water and a little salt. Once it is brought to a boil lower the heat, put a lid onto it and cook for about 15 minutes.
Remove the rice from the heat and leave it to chill for 10 minutes without stirring and without removing the lid.

Boil the bean sprouts in salted water for about 10 minutes. Drain them from the water and rinse with cold water.

Cut the peppers, zucchini and carrots into matchsticks. Season with salt and set them aside.

Cut the cucumber in half and chop it into thin half Moons. Season with salt.

Transfer the dried bean sprouts into a bowl. Add a teaspoon of sesame oil and a little salt and stir.

Cook the spinach in a frying pan along with a teaspoon of sesame oil, a teaspoon of mashed garlic and a little salt for about a minute, until the spinach shrinks. Put it into a bowl and sprinkle with sesame.

Drain the zucchini off its juices and put it into the frying pan along with a teaspoon of sesame oil and a teaspoon of sunflower oil. Add the finely cut green onion (set aside a portion of it for sprinkling at the end). Cook for a minute and transfer it into a small bowl.

Clean the saucepan using kitchen paper and add the cucumber along with a teaspoon of sesame oil. Cook with a continuous stir for about 20 seconds. The cucumber should become crispy. Transfer it to a separate bowl.

Put the red peppers along with a teaspoon of sesame oil and a teaspoon of sunflower oil into the frying pan. Cook for about a minute and add ½ teaspoon of sugar. Cook for a little more and transfer it into a separate bowl.

Clean the frying pan using kitchen paper again and cook the carrots along with a teaspoon of sesame oil and ½ teaspoon of sugar for about a minute. Put them into a separate small bowl.

Put the veal meat along with its marinade in the same pan. Cook until the meat begins to change its color and move it into a separate bowl.

Cook the mushrooms along with a teaspoon of sesame oil and a little salt until they begin to brown. Remove them from the frying pan.

Mix all the ingredients for the spicy sauce in a small bowl and stir so that they combine.

Fry the eggs over medium heat without stirring and with a little cooking oil until the egg whites harden and the yolk remains somewhat raw. Season with salt.

Mix the rice with a tablespoon of sesame oil, a tablespoon of light soy sauce and salt (if needed). Stir and place a layer of rice into the plates. Place small heaps of the different vegetables and the meat. Place an egg into the center of the plate. Add some of the spicy sauce. Sprinkle with sesame and finely cut green onion.
