Mosaic sushi rolls

Art sushi

INGREDIENTS:
8 nori sheets
300 g sushi rice
550 ml water
100 ml rice vinegar
2 tablespoons sugar
1 level teaspoon salt
2 cucumbers
200 g marinated daikon radish
200 g smoked salmon
20 ml beetroot juice (or edible red or pink paint)

PREPARATION:
Put the rice in a sieve and rinse it under running water until the water that goes through it is no longer white. Put it in a cooking pot together with water and boil for 15 minutes over very low heat until it absorbs the water. Remove from the heat and let it cool for at least 20 minutes.
Heat the rice vinegar, sugar and salt and stir until they melt. Boil for about 2-2 ½ minutes until the liquid reduces. Add the mixture to the rice and stir. Divide the rice into 5 parts and transfer 2 of them into a bowl and the other 3 into another bowl. Add the beetroot juice (or edible red paint dissolved with a tablespoon of water) to the larger part of the rice. Stir until the rice turns pink.
Rinse the cucumbers, dry them and cut them into half horizontally and without peeling them. Then cut each half like this:

You will only need the outer pieces (the angular ones) so that once you combine them you will have a whole, thinner cucumber:

Do the same for the second cucumber.
Cut a nori sheet so that you can cover a cucumber with it. Put white rice onto the sheet but leave about 2 cm at the end without rice. Put some water on the small area of the nori sheet that you left without rice. Place the 4-piece cucumber as shown below.

Make the second nori sheet narrower too but slightly wider than the first one because you will use the new one as an outer cover for the roll.
Place the painted (pink) rice, again leaving 2 cm without rice at the end. Put water onto the part without the rice. Place the first roll onto the pink rice, as shown below.

Roll once again.

Slice the big roll along its center as shown below using a very sharp knife.

Slice each half once again through the center of the cucumber so that you get 4 pieces like the ones on the photo below.

Stick two nori sheets together using slightly crushed rice so that you get one long nori sheet.

Place 2 of the 4 pieces of roll that you got after cutting through the cucumber at the beginning of the long nori sheet. The 2 pieces should be facing each other along their own sheets of nori while the pieces of cucumbers must be facing outwards.

Spread a little mayonnaise in the opening between the nori sheets and place there a rectangle-shaped piece of marinated daikon radish.

Put two long pieces of the smoked salmon (again shaped like a long rectangle) along the daikon radish. Finish by placing a second piece of the radish at the center, with the same size as the first one.

Spread a little mayonnaise onto the radish and the salmon and place the other pieces from the 4-piece roll. Place them so that their nori sheets face the salmon and the radish. The cucumbers should be at the angles of the whole thing.

Roll this into the long sheet of nori (that you got by sticking 2 regular sheets together) and put water at its end so that it can stick easily.

Cut it into 1.5-2 cm wide pieces using a very sharp knife and serve.
