South American cookies with Dulce de leche

Alfajores

INGREDIENTS:
Makes about 32 cookies:
100 g butter
100 g sugar
120 g all-purpose flour
120 g starch
2 tablespoons milk
2 yolks
1 teaspoon baking powder
1 teaspoon rum

200 g Dulce de leche or another caramelized milk

PREPARATION:
Whisk the yolks together with the sugar, butter and milk. Add the rest of the ingredients and knead into a soft dough. Cover it with plastic wrap and leave it to rest in the fridge for at least half an hour. Roll it out and make it about 7-8 mm thick. Cut small circles out of it and put them in a baking tray that has been covered with a sheet of baking paper. Bake them in a pre-heated oven at 180°C for about 8-10 minutes or until they start browning. Wait for them to chill before removing them from the baking paper. Stick them together using Dulce de leche.
