Nigerian Bean Balls

INGREDIENTS:
800 g boiled beans (using black-eyed peas is recommended)
1 onion
1 teaspoon chili powder
salt (optional)

For frying:
2 eggs
all-purpose flour
breadcrumbs
sunflower oil

PREPARATION:
Cut the onion and mix it with the chili. Sauté them with sunflower oil. Once the onion gets soft remove from the heat. Add the onion and the chili to the beans. Blend and make balls from the mixture with wet hands. Flour them and dredge them in beaten eggs, followed by breadcrumbs. Fry in heated oil from both sides.
