Moussaka with lamb offal and rice

INGREDIENTS:
~600 g lamb offal – lung, liver, heart, kidneys, sweetbread, tripe, etc.
330 g rice
1 liter of the stock (bouillon) in which you boiled the lamb offal
1 onion head
3 sprigs green onion
1 sprig fresh garlic
1 teaspoon cumin
1 teaspoon black pepper
2 bay leaves
3-4 tablespoons sunflower oil
fresh parsley
salt

For the topping:
600 ml milk
70 g butter
70 g all-purpose flour
3 eggs
a pinch of nutmeg
salt

PREPARATION:
Clean and rinse the lamb offal very well. Put them in a saucepan with salted water and boil over low heat for about an hour. After that cut the meat into small pieces.

Cut the onion into small cubes. Rinse and cut the green onion and fresh garlic into small pieces. Cook for several minutes with a continuous stir and add the rice. Fry until it becomes translucent and add the finely cut meat, bay leaves, cumin, black pepper, cut parsley and about ¼ of the stock. Stir until the rice absorbs the liquid. Add the remaining stock, stir and transfer the dish to a rectangular baking tray. Season with salt (but be careful as the stock is already salty). Cook in the oven at 200°С for about 40 minutes until the rice absorbs all the liquid. Meanwhile prepare the topping.

Topping
Melt the butter in a saucepan and add the flour. Stir for about 2-3 minutes. Lower the heat and add the milk. Keep stirring so that lumps don’t form until the sauce begins bubbling and thickens. Remove from the heat and add the nutmeg and salt to taste. Leave the sauce to cool. Whisk the eggs in a bowl and slowly add the sauce so that the temperatures are balanced. Stir until they combine.

Pour the topping onto the dish and cook in the oven for another 10-15 minutes until the topping thickens. Sprinkle with parsley and serve.
